There is just something about a thin, crispy, lightly fried piece of chicken or turkey that makes even the pickiest diners happy.  And luckily with the increased popularity of almond flour, it's easy to make a low carb version that is just as tasty.   Instead of the traditional chicken, I like to mix it up and use pounded out turkey breast cutlets flavored with a little but if Parmesan cheese.  Served with some lemons and capers if you like them, it's a delicious meal.

  • 24 oz. boneless skinless turkey breast
  • 3 U egg whites
  • 1/4 cup almond flour
  • 1/4 cup Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tbsp. vegetable oil
  • 1 U lemon

Directions

  1. Cut the turkey breast into individual servings. Pound out until it is about 1/8 inch thick.
  2. Mix together the almond flour, cheese, salt, and pepper.
  3. Dip the turkey into the egg whites and then press in breadcrumb mixture on both sides.
  4. Heat oil over medium high heat.
  5. Add the turkey and cook for 3-4 minutes per side. Serve with fresh lemon.
