I have always loved a good fish burger.  I think it started from my love of crab cake sandwiches and just ballooned from there.  With that said, I must admit, at home I have trouble using expensive ingredients like shrimp, salmon, or ahi tuna for burgers even though I wouldn't hestitate to order them out.  This leads me to usually reach for fish like tilapia for at home seafood burgers.  This version keeps things low carb by using flaxseed meal instead of the traditional Panko breadcrumbs that would often be used.  Then it is served between two yummy portabella mushrooms with avocado.  Delish.

Ingredients

  • 1 lb. tilapia
  • 2 tbsp. flaxseed meal
  • 1 U egg
  • 1 U egg white
  • 2 tbsp. Dijon mustard
  • 2 U garlic cloves, minced
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. paprika
  • 1/2 tsp. basil
  • 1 tsp. onion powder
  • 1 tsp. vegetable oil
  • 8 U portabella mushrooms
  • 1 U avocado

Directions

  1. Preheat the oven to 400 degrees. Spray the mushrooms with cooking spray and season with salt and pepper. Cook for 10-12 minutes until tender. These will be the hamburger buns.
  2. Pulse the fish in a food processor until just chopped.
  3. Combine the fish with the flaxseed meal, egg, egg white, mustard, garlic, salt, pepper, paprika, basil, and onion powder.
  4. Form into patties. If needed place the mixture in the fridge for 10 minutes before forming patties. It will help them stay together.
  5. Brush burgers with vegetable oil.
  6. Cook in a medium hot skillet for about 4 minutes per side.
  7. Serve on mushrooms with avocado and your favorite burger toppings.
