It's hard to beat a really good pastrami sandwich or hash, but unfortunately many of them easily clock in at between 600-1000 calories, not too mention the potatoes and bread. So when I am craving pastrami I usually satisfy my cravings with the 98% lean pastrami from the deli, which although not quite the real thing, is pretty darn tasty. In this recipe it's paired with shredded summer squash, onions, and peppers for a quick and delicious breakfast (or dinner!) hash that doesn't take very much work. Depending on your dietary needs, you could also use full fat pastrami in this recipe but I think the lean version tastes great.

Ingredients

  • 1 tbsp. olive oil
  • 3 U summer squash, grated
  • 1 U onion, diced
  • 1 U green pepper, diced
  • 1 U red pepper, diced
  • 1 tsp. paprika
  • Salt and pepper
  • 8 oz. deli 98% lean pastrami, diced
  • 8 U eggs

Directions

  1. Heat the olive oil in a medium skillet over medium high heat.
  2. Add the squash, onion, pepper, paprika, salt, and pepper. Let cook without stirring for 3-5 minutes until everything begins to brown and get crispy.
  3. Add the pastrami and stir. Let cook again, undisturbed 2-3 minutes until everything gets browned. Continue cooking for 3-5 minutes until everything is cooked to your liking.
  4. Set aside and cover.
  5. Spray the pan with cooking spray and cook eggs to your liking. Serve over the hash.
