As much as I hate to admit it, I love Egg McMuffins from that place with the golden arches. It is an indulgence that I don't give into often, but man are they good. However I do make them at home quite often. Not only are they affordable but they couldn't be easier. Lately I have been trying to cut back on carbs so I have been making them with low carb wraps. Normally I throw in some extra veggies from whatever is leftover from dinner the night before.

Ingredients

  • 3 U eggs
  • 3 U egg whites
  • 3 U slices Canadian bacon
  • 6 tbsp. part skim shredded mozzarella cheese
  • 3 U Flatout light wraps
  • Salt and pepper to taste

Directions

  1. Preheat a skillet over medium heat and spray with cooking spray. Whisk together the eggs and egg whites. Season with salt and pepper. Add to pan and scramble. Set aside.
  2. Lay out your three tortillas and add 1/2 scrambled eggs, 1 slice of Canadian bacon, and 2 tbsp. cheese to each wrap.
  3. Roll up in plastic wrap and place in the fridge for breakfasts later in the week. If you are worried about the wrap becoming soggy, pack the eggs separately and then assemble sandwiches in the morning.
