I never need a special occasion to make tacos and we eat them at least twice a week in some form. At least once it's a traditional dinner recipe but the rest of the time it is usually in yummy breakfast tacos or lunch tacos with leftovers. Since mornings can be hectic, I love making these five minute breakfast tacos. The eggs are seasoned with some cumin and oregano and then stuffed into a nice warm low carb tortilla with avocado and salsa. Usually I add some veggies as well - diced bell peppers, cherry tomatoes, spinach, or zucchini are some of my favorites.
