The key to making this lower carb meatloaf is to add lots of flavor with ketchup, mustard, Worcestershire sauce, and spices and look for a no sugar added barbecue sauce to finish things off. If you can't find a low sugar barbecue sauce you could make your own or use another lower sugar sauce you enjoy. Perhaps a steak sauce, hoisin sauce, or other thicker sauce. You could also always use ketchup and flavor it with some chipotles, hot sauce, or even curry powder depending on what flavors you like.

Ingredients

  • 1/2 U onion, minced
  • 2 U garlic cloves, minced
  • 1.25 tsp olive oil
  • 1.67 lbs 99% lean ground turkey
  • 5 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp Worcestershire sauce
  • 2.5 tsp grill seasoning
  • 1 U egg
  • Salt to taste
  • 5 tbsp no sugar added barbecue sauce

Directions

  1. Preheat the oven to 350 degrees.
  2. Sauté the onion and garlic in the olive oil until tender, about 5-7 minutes.
  3. Gently combine the onions, garlic, turkey, ketchup, Worcestershire sauce, grill seasoning, and egg. Season with salt if needed. Be careful because ketchup and Worcestershire have salt.
  4. Spray a standard muffin tin with cooking spray. Divide the meatloaf mixture between 10 holes. Top with barbecue sauce using a brush. You could also use mini loaf pans if you have them or shape them into mini loaves by hand and place on a baking sheet.
  5. Bake for 20-25 minutes for the muffins, 30-35 minutes for mini loaves, or until cooked through.
