Lately I have been making tons of baked or grilled tofu to have during the week for quick salads, wraps, and rice bowls. Each week I try different marinades and this lemon thyme version is up there at the top of the list as one of my favorites. I love the bright lemony flavor and earthy thyme.

Ingredients

  • 20 oz. extra firm tofu
  • 1 U lemon (juice and zest)
  • 1 tbsp olive oil
  • 2 tsp honey (or agave for vegan)
  • 3/4 tsp kosher salt
  • 1/2 tsp lemon pepper
  • 2 U cloves garlic, minced
  • 3 U sprigs fresh thyme

Directions

  1. Preheat the oven to 400 degrees.
  2. Rinse the tofu and press dry using a towel or paper towels. Cut into 1 inch chunks. Season with salt and pepper.
  3. In a small bowl, whisk the lemon juice, lemon zest, olive oil, honey, salt, lemon pepper, garlic, and thyme together. Toss the tofu with the marinade and let rest for at least thirty minutes.
  4. Lay out the tofu flat on a baking sheet sprayed with cooking spray. Pour remaining marinade over top. Bake for 30 minutes, flipping halfway through, until golden brown and crispy on the outside.
  5. Grill option: This tofu can also be grilled for 4-5 minutes per side. Just cut the tofu into planks instead of one inch cubes.
