  • 3.33 cups water
  • 1.67 cups quinoa, rinsed and drained
  • 1/2 cup parsley, chopped
  • 1/4 cup lemon juice
  • 1/4 cup black olives, chopped
  • salt and pepper

Directions

  1. Bring the water to a boil. Add the quinoa and turn down to a simmer. Cover and cook for 12-15 minutes until tender. Fluff with fork.
  2. Stir in the parsley, lemon juice olives, salt, and pepper.
