Lately I have been thinking a lot about soup sides. I love to eat soup this time of year but usually want something more to make it a true meal. Sometimes this is a simple salad, but if I am cold and trying to warm up – I want bread. And this corn muffin is perfect. It’s sweet and spicy with the combination of jalapenos, sweet corn, and cranberries. Don’t like spice? Just cut out the jalapenos. These also make a delicious breakfast and with a fried egg in the middle – a to-die-for sandwich.

Ingredients

  • 2 tbsp butter
  • 1/3 U chopped onions
  • 1 cup canned corn (or fresh)
  • 3/4 tsp salt
  • 1 cup whole wheat flour
  • 1 cup yellow corn meal
  • 1 tbsp baking powder
  • 1 cup buttermilk
  • 1/4 cup unsweetened applesauce
  • 2 U eggs, lightly beaten
  • 1 U jalapeno, seeded and diced (or more)
  • 3 tbsp honey
  • 1 cup fresh cranberries

Directions

  1. Preheat the oven to 375 degrees and spray your muffin tin with cooking spray.
  2. Add the butter to a saute pan over medium heat. Add the onions and cook for about 5 minutes until softened. Add the corn and salt. Cook for 3 more minutes. Remove and set aside to cool.
  3. Mix together the corn meal, baking powder, and flour in a bowl. In another bowl mix together the buttermilk, applesauce, eggs, jalapenos, and honey. Slowly add the liquid to the cornmeal mixture and stir until just combined. Fold in the corn onion mixture and cranberries.
  4. Bake for 12-15 minutes or until cooked through.
