Sometimes a girl just wants a steak and today was one of those days. As I am still figuring out my grill, normally this would be a day where I thought about going out for dinner, but instead I decided to brave the grill and try to recreate one of my favorite restaurant dishes grilled skirt or flank steak with chimichurri. I decided to use flank steak since it is generally a little leaner and made the chimmichurri by replacing the olive oil with greek yogurt. All in all, it completely satisfied my steak craving and for only 4 points it will be making future appearances.

Ingredients

  • 1 lb of flank steak, trimmed of fat
  • 1 U Juice of two lemons
  • 1 U bunch flat leaf parsley
  • 1 tsp red pepper flakes
  • 5 U garlic cloves
  • 4 tbsp non fat plain Greek yogurt
  • Salt and pepper

Directions

  1. In a ziploc bag or container, marinate the flank steak for at least 3 hours in the juice of one lemon, salt, pepper, and 1 crushed garlic clove. Flank steak can be a little tough, so marinating it is important to tenderize the meat.
  2. To make the chimichurri sauce, combine the parsley, juice of one lemon, 4 garlic gloves, yogurt, salt, pepper, and red pepper flakes in a small food processor or blender.
  3. Preheat the grill on medium heat and grill the flank steak to your desired done-ness. Slice think and cover with 1 tbsp of chimichurri sauce.
