I don't know about you but I LOVE a good egg breakfast. If you feel the same way, you have to try and make this baked frittata recipe. It has fresh herbs, tomato, and goat cheese- a great combination in my honest opinion. It makes for the perfect weekend brunch dish or a quick dinner meal!

A couple of weeks ago, we splurged on a fancy weekend brunch, and I had the most amazing soft scrambled eggs with tomatoes, goat cheese, and fresh herbs. It was sooooo good, and I was licking my plate to gobble up every last morsel.

People were probably staring, but I couldn't help myself!

Since then, I have been adding fresh herbs to all of my eggs and especially loved this frittata version I made last week for a quick dinner.

The fresh herbs take what would be a normal baked frittata recipe and elevate it to something extraordinary. I used a combination of chives, basil, and parsley, but any combination of herbs would work.

Paired with the goat cheese and sweet cherry tomatoes, it's a combination I will be making again and again!

Ingredients For Tomato and Goat Cheese Fritatta Recipe

To make this dish at home yourself, here are some of the key ingredients you will need:

  • Eggs: The base of any good frittata is the eggs. I always buy large eggs and if you can find them fresh from the farm, it can make your frittata something really special.
  • Fresh herbs: This recipe calls for fresh basil, chives, and parsley but you can use any fresh herbs you like or have on hand. Think fresh dill, cilantro, oregano, or thyme. If you don't have fresh, dried herbs will work as well. Just remember you won't need as much. 
  • Cherry tomatoes: When tomatoes aren't in season, I always reach for cherry tomatoes since I find they usually have the best flavor. However any tomatoes will work and you could use diced canned tomatoes in a pinch. Just drain them first. 
  • Crumbled goat cheese: Goat cheese adds this amazing tanginess and creaminess to this baked frittata but any cheese will work. Consider mozzarella, a sharp cheddar, some herbed goat cheese, or a pungent cheese like Swiss or Gouda.

Side Dish Ideas For Baked Frittatas

When serving frittata for breakfast or brunch, I find it to be best served with a simple and light side dish like lightly tossed greens. The dish itself already has a lot going on so you want to find a side dish that will compliment that.

If you are wanting something a little more creative, here are some more ideas:

  • If you want to turn this simple baked frittata recipe into a full-blown meal, consider serving this with a side of home-style potatoes and your choice of breakfast meats (breakfast sausage, crispy bacon, or country ham).
  • For those who are trying to get their carbs in early in the morning, consider making some homemade low carb waffles or healthy greek yogurt pancakes.

Baked Frittata Recipe Ideas and Tips

Try to follow these recipe tips to make sure that the dish comes out perfect every single time you make it!

  • If you want to get creative, try swapping out the goat cheese for a different type of cheese. I personally think from fresh mozzarella or some crumbled feta would work out great!
  • Not a big fan of those herbs I added in? That's okay! Try out some fresh oregano, dill, rosemary, or watercress. Add whichever herbs you love the best.
  • You can easily make this breakfast dish dairy-free by swapping out the 1% milk for some non-dairy alternative like almond milk. You can also swap the goat cheese out for a non-dairy cheese or just completely omit it if you like.

What's the difference between an omelet and a frittata?

Many people tend to mix up the two since they both have eggs and additional ingredients like veggies or herbs but they are not quite the same.

One of the major differences between these two egg dishes is that you usually mix all of the ingredients together with the eggs when you bake a frittata instead of just adding the fillings to the center before you fold it like you would with an omelet.

Frittatas also tend to be a breakfast dish that can feed multiple people while an omelet usually feeds one person, maybe two if you feel like sharing (not me!).

How long does a frittata last in the fridge?

You can store your frittata in the fridge for up to 4 days.

Can I freeze this frittata recipe?

Yes! This tomato and goat cheese frittata is a great recipe to add to your meal prep plan for breakfast.

All you have to do is one the frittata is baked and cooled off, use food-safe plastic wrap, and completely wrap the frittata making sure no air can get it and everything is covered before sticking it into the freezer.

If you want to make portion sized meals, cut the frittata into slices and either plastic wrap them or put them into freezer-safe containers before sticking them in the freezer.

Whichever way you decide to do it, make sure to add the dates you made them so you can keep track!

Preheat the oven to 450 degrees.

Whisk together the eggs, milk, salt, and pepper.
