Everyone has there own version of a fiesta or Mexican style rice. I like mine with black beans, lime juice, and pico de gallo, which sometimes I make and sometimes I just buy. It makes a perfect side dish for chicken, steak, or fish and is great for lunch or dinner. Mix some together with chicken breast, your favorite lettuce, and a great salsa and you have the perfect Mexican salad.

  • 1 cup cooked brown rice
  • 1 cup canned black beans, rinsed
  • 1 cup pico de gallo
  • 1 tbsp lime juice
  • 1/4 tsp salt

Directions

  1. Cook rice according to package direction with chicken broth.
  2. While still warm in the pot, mix in black beans, lime juice, and pico de gallo. Warm for 1-2 minutes and serve.
