This past Sunday morning was amazing it was the kind of Sunday that I wished all the time but somehow only happens once in a blue moon. I woke up without an alarm clock, strolled down to the farmer’s market where I bought some incredibly huge zucchini for this recipe, drank delicious coffee, and then strolled home to bake muffins and drink more coffee. Then I preceded to plunk down and finally watch the season finale of Weeds. I still have mixed feelings about the season finale, but not about these muffins. They are light and delicious and have a great subtle flavor of zucchini running through out.
I like to grate my zucchini for these muffins so I am not biting into a big hunk of zucchini, but shredded or grated works great. If someone in your life is scared of zucchini in their muffins, then go with the grating. They will never know. And the dark chocolate is pretty special with zucchini as well.
