I fell in love with this Curry Chickpea and Carrot Burgers the very first time I made them. Granted I am a sucker for anything involving carrots and chickpeas, but these are some of the best vegetarian burgers I have ever had. The sweet carrot, spicy curry, and earthy chickpeas are one delicious combination.

Now let's talk about the toppings for this burger because you can get really creative, i.e. delicious. One of my favorite ways to top this burger is with some sliced mango or a mango chutney. Sweet and spicy always tastes good. Almost any kind of yogurt sauce is also amazing, I usually make one with yogurt, cilantro, lime, and a touch of curry powder. Finally don't shy away from the fresh veggies or fruit - sprouts, tomatoes, spinach, grilled onions, avocado, apple, and even shredded jicama are all perfect for this burger.

  • 20 oz. canned chickpeas, rinsed and drained
  • 1/2 cup oats
  • 2 U carrots
  • 2 tbsp. cilantro
  • 1 tbsp. olive oil
  • 2 tsp. curry powder
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup pumpkin seeds

  1. Preheat the oven to 375 degrees.
  2. Add the oats, carrots, and spices to the food processor. Pulse for about 30 seconds or until smooth.
  3. Add the coconut oil and chickpeas, adding 1/2 cup chickpeas at a time. Pulse until combined, scraping down edges if needed.
  4. Once the mixture is mostly combined, remove from food processor and stir in the pumpkin seeds. Wet your hands and form into patties using your hands.
  5. Pop the patties in the freezer for five minutes to firm up the burger.
  6. Bake for 25-30 minutes, flipping once during cooking until golden brown. You could also cook these in a skillet for 5-6 minutes per side.
