Looking for a quick and delicious lunch? Look no further than the leftover chicken (or rotisserie chicken) in your fridge. This twist on a traditional chicken salad sandwich saves over 300 calories by using low-fat mayonnaise and Greek yogurt and then amping up the flavor with curry powder and red grapes. Served on some light toasted bread of wrapped up in lettuce for a lower carb or gluten-free version and it makes the perfect lunch or quick dinner.

  • 1/2 cup cooked chicken breast, shredded
  • 1 tbsp fat free plain Greek yogurt
  • 1/2 tbsp reduced fat mayonnaise
  • 1/4 cup celery, diced
  • 1/4 cup carrots, diced
  • 1/4 cup grapes, chopped
  • 1/2 tsp curry powder
  • Salt and pepper to taste

Directions

  1. Combine all the ingredients, except the bread, in a large bowl. If possible, let sit for 1-2 hours so flavors can combine.
  2. When you are ready to make the sandwiches, first toast the bread. Place the chicken salad onto the bread. Add your favorite greens or veggies.
