Cumin and chickpeas is one of my favorite combinations, probably because it reminds me of Indian food that I love so much. And this recipe makes one seriously delicious lunch of dinner. Cumin chickpeas, garlic, sundried tomatoes, crispy celery, parsley, mint all piled over a hearty bowl of nutty farro. Usually I add some extra lemon over the top and a dollop of yogurt. This is great warm or cold and makes a great side dish as well.

Ingredients

  • 1 cup farro
  • 4 tsp. olive oil
  • 2 tsp. cumin (or more)
  • 1/4 tsp. red pepper flakes
  • 2 U garlic cloves, minced
  • 20 oz. canned chickpeas, rinsed and drained
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup parsley, chopped
  • 1/8 cup fresh mint, chopped
  • 1 U lemon (zest and juice)
  • 4 U celery stalks, chopped
  • 1/2 cup reduced fat feta cheese
  • Salt and pepper

Directions

  1. Cook the farro according to package directions.
  2. Heat the olive oil in a skillet over medium heat. Add the cumin, red pepper flakes, and garlic. Cook for one minute. Turn the heat up to medium high. Add the chickpeas and sundried tomatoes. Cook for 4-5 minutes until chickpeas are just browning. You can add the celery as well but I prefer it raw and crunchy in this recipe.
  3. Turn off the heat and stir in the parsley, mint, lemon juice, and lemon zest.
  4. Serve over the farro with chopped celery and feta cheese.
