One of the most requested recipes from low carb dieters, especially when they just start, is replacements for their beloved potato. In today's recipe, there is a simple replacement for an oven roasted potato wedge made with turnips instead of potatoes. You could also use rutabaga, celery root, squash, or another firm vegetable instead. Mix up the spices to create a flavor combination you love. You can also microwave the turnips first for faster cooking.

  • 4 cups turnips
  • 2 tbsp. olive oil
  • 1 tsp. paprika
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1/2 tsp. cayenne pepper

Directions

  1. Preheat the oven to 450 degrees
  2. Wash the turnips and cut into wedges.
  3. Add the olive oil and spices to a bowl.
  4. Toss the turnips with the olive oil spice mixture.
  5. Place in one layer on a baking sheet covered with parchment paper. Roast for 15 minutes and then flip over. Roast for another 15-20 minutes.
