I couldn’t be happier that cherries are in season right now. I adore them and am honestly eating at least a bowlful daily. Need to get my fill in before they disappear again soon. The season is much too short for my liking. I am also experimenting with lots of cherry recipes, so you can expect some more in the next couple weeks – cherry chocolate smoothies, cherry crumble, and maybe some homemade version of Cherry Garcia ice cream if I can figure it out. I thought we would start with one of my favorites – simple chocolate covered cherries. It couldn’t be easier.

A note on the points. If you count the cherries in the recipe then it is 1 point for 1 cherry, 1 point for 2 cherries, or 3 points for 5 cherries. If you don’t count the cherries it is 1 point for 4 cherries or 8 cherries for 3 points plus.

  • 1 lb cherries (about 40 for the pound I bought)
  • 1/2 cup dark chocolate chips
  • 3 tbsp 2% milk (to thin out the chocolate)

  1. Method 1: Using a double boiler, bring your water to a boil and then turn off. Add your chocolate to the small bowl and stir until melted. Slowly pour in the milk until it is fully incorporated. Then dip your cherries into the chocolate and place onto a baking sheet with parchment paper. Let solidify in the fridge for at least 30 minutes. Store in the fridge in an airtight container.
  2. Method 2: Place your chocolate in a microwave safe dish and microwave for 1 minute at 1/2 power. Continue to microwave for 30 second increments at 50% power until melted. Slowly stir in the milk, incorporating it into the chocolate. Dip the cherries in the chocolate and place onto a baking sheet covered with parchment. Place in the fridge for at least 30 minutes before eating. Store in the fridge in an airtight container.

Optional: To spice things up consider using white chocolate as well or dipping the cherries in crushed nuts (pistachios would be delicious) after dipping them in the chocolate.
