A few weeks ago I let you in on a little secret, that I shamelessly eat cherries everyday and probably go through pounds every week. I don’t know what to say other than I simply love them and cherish the short season when they are in abundance. This recipe combines two star crossed lovers chocolates and cherries in a light, sweet cupcake for only 3 points and 100 calories. Not a cherry fan consider replacing the cherries with raspberries, strawberries, or just leaving them out. The base recipe for the chocolate cupcakes comes from Chocolate Covered Katie, a wonderful blog full of healhty, mostly vegan desserts.

Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1 cup all purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 10 tbsp. sugar
  • 1 1/2 tbsp cornstarch
  • 1 1/2 tsp vanilla extract
  • 1/2 cup light vanilla yogurt
  • 6 tbsp. unsweetened applesauce
  • 1 1/2 tbsp vegetable oil
  • 1/2 cup skim milk
  • 1/4 cup semi sweet chocolate chips
  • 2 cup cherries, pitted and chopped
  • 2 tbsp powdered sugar

Directions

  1. Preheat the oven to 350 degrees.
  2. Mix together all of your dry ingredients in one bowl and all of the wet ingredients in another.
  3. Add the wet ingredients to the dry and stir until just mixed.
  4. Fold in the cherries and chocolate chips. Pour into your cupcake tray.
  5. Bake for 20-25 minutes until cooked through. Sprinkle with powdered sugar.
