If you came to my house on any given morning, you would likely see me running around like a crazy person and making some version of this microwave egg mug. Being someone who needs protein at breakfast so I am not starving am hour later, eggs are my go-to but I don't always have time to pull out a frying pan and make a yummy veggie scramble or omelet. So on those busy mornings I reach for a three minute egg mug. It starts with veggies, in this case a handful of mushrooms and tomatoes. The veggies are quickly cooked until tender. Then you scramble in the eggs, some cheese, salt, pepper, and any spices/herbs. Back into the microwave for two minutes and breakfast is ready. It's filling, healthy, and delicious.

Ingredients

  • 2/3 cup mushrooms, chopped
  • 1/4 cup tomatoes, diced
  • 2 U eggs
  • 2 tbsp part skim mozzarella cheese
  • Salt and pepper

Directions

  1. Spray a mug with cooking spray. Add the mushrooms and tomatoes and cook in the microwave for one minute until mushrooms are tender. Drain any excess liquid.
  2. Remove from microwave and add the eggs. Scramble using a fork. Season with salt and pepper and stir in cheese.
  3. Microwave for 1 minute. Open and stir. Microwave for 45 second more or until eggs are cooked through and puffed up.

    I loved this recipe! Great flavors and super easy! I added in a dash of sriracha to up the flavor a bit. Definitely a repeat!
