Cauliflower soup made with just cauliflower, onion, and olive oil hmmm. I didn’t quite believe how delicious this soup could be by even after reading review after review about how good it was. Luckily, it stood up to all the hype and was simple, delicious, and the perfect soup for anyone trying to eat healthy, on Weight Watchers, or who just wants some great soup. It is also incredibly inexpensive to make, which is always a plus. This recipe comes from Paul Bertoli and I found it on Food52 . I also need to credit them with the photo today because my camera is being repaired and the phone picture just didn’t do it justice. I cut down on the olive oil and used a little less water to make it extra creamy.

Ingredients

  • 1 tbsp olive oil
  • 1 U onion, sliced thin
  • 1 U large head fresh cauliflower
  • 1 U sprig thyme (optional)
  • 4 1/2 cups hot water, divided
  • Salt and pepper

Directions

  1. Warm the olive oil in a heavy-bottomed pan. Cook the onion in the olive oil over low heat without letting it brown for about 15 minutes. Don’t worry if it browns a touch, just make sure it doesn’t burn.
  2. Add the cauliflower, salt and pepper to taste, and 1 cup water. Raise the heat slightly to a simmer, cover the pot tightly and stew the cauliflower for 15 to 18 minutes, or until tender.
  3. Add another 3 cups hot water, bring to a low simmer and cook an additional 20 minutes uncovered. Add the thyme here if you are using it.
  4. Purée the soup in a blender to a very smooth, creamy consistency. Let the soup stand for 20 minutes. In this time it will thicken slightly.
  5. Serve with a drizzle of olive oil, Parmesan cheese, fresh black pepper, or fresh herbs.
