Cauliflower soup made with just cauliflower, onion, and olive oil hmmm. I didn’t quite believe how delicious this soup could be by even after reading review after review about how good it was. Luckily, it stood up to all the hype and was simple, delicious, and the perfect soup for anyone trying to eat healthy, on Weight Watchers, or who just wants some great soup. It is also incredibly inexpensive to make, which is always a plus. This recipe comes from Paul Bertoli and I found it on Food52 . I also need to credit them with the photo today because my camera is being repaired and the phone picture just didn’t do it justice. I cut down on the olive oil and used a little less water to make it extra creamy.
