If you follow a low carb diet but are craving an egg muffin, this simple egg mug might just do the trick. Made with everything expect the English muffin with some added spinach for greens, it's healthy and comes together in under 5 minutes. Consider topping it with some salsa, avocado slices, or alongside some fresh fruit for a complete meal. It's also delicious wrapped up in a low carb wrap.

  • 1 U egg
  • 1 U egg white
  • 2 U slices Canadian bacon
  • 2 tbsp. shredded part skim mozzarella cheese
  • 1/2 cup spinach

Directions

  1. Spray a mug with cooking spray. Add the egg and egg white and whisk together. Add in the chopped Canadian bacon, spinach, and cheese.
  2. Microwave on high for 2-2:30 minutes until puffed up and cooked through.

    When I first saw microwaving in a coffee mug, I wondered whether it was genius and "why didn't anyone think of this before" or "eh, yeah, not so good--no wonder I've never heard of it". It was decidedly the former!. My favorite version is adding a few quartered cherry tomatoes and with just any kind of shredded or crumbled cheese I have on hand. I now make this one or twice a week, including for work. I just put the egg mixture in a 1 cup size food storage container and bring a can of cooking spray with me. So good!
