One of my go to breakfasts! A simple protein packed oatmeal dish made with steel cut oats, banana, and eggs for added protein. The eggs add a custard like consistency to the oats, making it a fun version of a breakfast custard.

Ingredients

  • 1/4 cup steel cut oats
  • 1 cup water
  • 1 U egg
  • 2 U egg whites
  • 1 U banana

Directions

  1. Cook oatmeal as directed.
  2. When almost cooked, add the whole egg and the egg whites. Stir. Add fruit. Continue to stir occasionally until oatmeal becomes thicker and eggs are fully cooked.
  3. Enjoy!
