So these tacos are de-li-cious. Seriously. But the photo? Ugh, not so much. My camera is currently being repaired after an unfortunate run in with a surprise thunder storm, so I am using my phone for photos this week. I downloaded Instagram hoping that would help, but they still aren’t coming out all that great, even though I see amazing Instagram photos all the time. Any advice?
But back to the tacos. This tacos make a great quick meal because they come together in a flash and don’t need too much attention. You just heat up some salsa, drop in the spinach and mushrooms, and then stir in some cheese before you are ready to eat. You could easily add some more veggies squash blossoms, sweet potato, or zucchini would be great I think or even add in some tofu or chicken. Serve them in warm tortillas or over brown rice. I also learned this works perfect over eggs in the morning.
