Black beans and apple combine to make the most delicious vegetarian burgers. Although I love a good veggie burger, I often get bored since I make the same ones all the time. So when I saw this recipe for black bean apple burgers, I couldn't wait to try them and they didn't disappoint. With a combination of black beans, apples, and cornmeal - these burgers are hearty and full of flavor. Topped with some cheddar cheese and barbecue sauce and it's a burger you will want to make all the time.

Ingredients

  • 20 oz. canned black beans, rinsed and drained
  • 1/2 cup apple, peeled and diced
  • 1/2 cup cornmeal
  • 1 U garlic clove, minced
  • 1/2 tsp thyme
  • 1/2 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp black pepper
  • 2 tsp. olive oil

Directions

  1. Pulse everything in a food processor until just combined. For into patties and refrigerate for 1 hour so the patties firm up.
  2. Preheat the oven to 400 degrees.
  3. Brush the burgers with olive oil. Cook in a medium hot skillet for 4 minutes per side. Then place on a foil lined baking sheet and cook for an additional 8 minutes in the oven, flipping halfway.
