Until this summer, my slow cooker was something reserved for winter when I wanted something warm and hearty. However, something about this summer has me breaking out the crockpot almost every week. Who know it could create such great summer recipes? This recipe is incredibly simple and combines smoky chipotle with barbecue sauce. The beef comes out flavorful and fork tender perfect for any summer barbecue or piled into a sandwich. This would also work with chicken.

Ingredients

  • 3 lbs lean eye of round beef roast, all fat trimmed
  • 2 cups barbecue sauce
  • 1/4 cup chipotle peppers in adobo sauce

Directions

  1. Stir the barbecue sauce and chipotle together to create the sauce.
  2. Sprinkle the beef with salt and pepper and add to the crockpot. Pour the sauce over the beef.
  3. Cook for 6 hours. Shred with a fork and cook an additional 10-20 minutes to let the sauce thicken up. Enjoy!
