One of my favorite holiday recipes is bread pudding and honestly I was always a little intimidated to make it, but after doing some research about making bread pudding, it is actually surprisingly simple and with a few easy changes can be pretty diet friendly. For this recipe I used chocolate chips, cinnamon, nutmeg, and bananas but it would definitely also be delicious with apples or cranberries. We liked it so much we ate it right out of the pan as you can see in the picture.

Ingredients

  • 8 oz. french bread but into cubes
  • 3 U eggs
  • 5 U egg whites
  • 1 cup skim milk
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/16 tsp. salt
  • 1/2 cup chocolate chips
  • 1 U banana, chopped into small pieces

Directions

  1. Preheat your oven to 350 degrees.
  2. Spray a round 9 inch cooking dish with cooking spray.
  3. Whisk together eggs, milk, cinnamon, nutmeg, salt, and splenda sugar mix until combined.
  4. Add bread, chocolate chips, and bananas to egg mixture and mix together.
  5. Pour everything into the baking dish and cover with foil. Bake for 45 minutes and then remove foil and bake for an additional 15-20 minutes until golden brown on the top. Let cool for 10-15 minutes. Serve and enjoy! This is also great with a little bit of low calorie whipped cream or low fat vanilla ice cream.
