I have to start this post by admitting that I actually didn’t cook this meal, my Mom did, but it was so simple and delicious I had to share it. It starts with any white flaky fish, for this recipe she used haddock, and then a simple stuffing topping. Then you throw it in a very hot oven and 5-7 minutes later, you have a delicious baked fish. I will definitely be stealing this recipe for all types of fish because the quick and high temperature keeps the fish moist and flaky. You can a delicious and healthy dinner ready in less than ten minutes definitely a keeper in my book.

Ingredients

  • 24 oz. haddock (or other flaky white fish)
  • 15 U Ritz crackers
  • 1 1/2 tbsp butter (room temperature)
  • 1 tbsp fresh parsley
  • 1 tbsp lemon juice
  • 1 U salt and freshly ground pepper

Directions

  1. Turn your oven up to 500 degrees. You could use the broiler, but the fish cooks more evenly on a rack in the oven.
  2. In a ziploc bag or in a food processor, crush the ritz crackers into small breadcrumb like pieces. Then mix the ritz crackers with butter, parsley, and lemon juice in a small bowl. This creates the stuffing for the baked fish.
  3. Salt and pepper your fish and then press the stuffing on top. Place in the oven on a shallow baking dish for 5-7 minutes. The fish is ready when it flakes away. For a thinner fish, you may not need to cook for as long.
