I love breakfast – breakfast for breakfast, breakfast for lunch, breakfast for dinner and it has to be at least kind of salty. One of my favorite things to have for breakfast is a poached egg and surprisingly it actually took me awhile to learn how to make a good poached egg. Once I learned that, the breakfast possibilities are endless (as are lunch and dinner). For this quick breakfast, I layer a poached egg on a bed of spinach, a slice of ham, a slice of low fat Swiss cheese, and the beautiful egg. Delish and incredibly easy.
Poached Egg, Spinach, and Ham
Servings: 1
Serving Size: 1 serving
Nutritional Info: 190 calories, 9 g of fat, 3 g of carbohydrates, 1 g of fiber, 20 of protein * 4 P+
Ingredients
1 egg
1 cup fresh spinach
1 slice deli ham
1 slice low fat Swiss cheese
pinch of red pepper flakes
Salt
Freshly ground pepper
Instructions
1. Bring a pot of salted water to a boil.
2. Meanwhile add non fat cooking spray to a saute pan and saute the spinach with salt, pepper, and red pepper until wilted on medium heat. Reduce the heat to low and cover with spinach with the ham and cheese slice. Cover and allow to continue to cook until cheese melts.
3. reduce the boiling water to just a simmer. With a spoon, stir the boiling water to create a whirlpool in the pot. Once you have a whirlpool, crack the egg into the center. Allow to cook for 3-4 minutes until the white firms up. While the egg is cooking, move the spinach, ham, and cheese to a plate. Remove from the egg from the water using a slotted spoon and enjoy!
