Peach Caprese

I love a good Caprese Salad – simple and delicious with fresh tomatoes and mozzarella, perfectly accented by basil, salt, pepper, and a touch of olive oil. But sometimes you need to switch things up, and this simple Peach Caprese is the perfect way to enjoy the delicious peaches available right now. Just substitute out some fresh, ripe peaches for the tomatoes and you have a wonderful spin on a classic salad. Want to bulk it up? Layer it on some arugula and add some chicken for a complete meal.

Ingredients

  • 2 ripe peaches, chopped
  • 2 oz fresh mozzarella cheese, chopped
  • 10 basil leaves, chopped
  • 2 tsp olive oil
  • 2 tsp balsamic vinegar
  • Salt and pepper to taste
  • Optional: Handful of arugula

Instructions

  1. Combine all the ingredients in a bowl and drizzle with olive oil, vinegar, salt, and pepper.
  2. Alternate Preparation: Thinly slice the peaches. Then thinly slice the mozzarella. Layer one slice of peach with one slice of mozzerella and 1 basil leaf, Drizzle with olive oil, balsamic, salt, and pepper.
