Paleo Pumpkin Pancakes

Pancakes are one of my favorite breakfast treats but all too often I find myself hungry just a couple hours later since they generally lack protein and fiber. Normally I combat that by making either Oatmeal or Peanut Butter Banana Protein Pancakes that pack more of a nutritional punch with lots of added fiber and protein. However lately I have been craving all things pumpkin so I decided to adapt the recipe a bit and use pumpkin puree and spices. I also wanted something I could make for some friends on the Paleo diet so I left out of the oatmeal. The resulting pancake is a bit like a crepe, full of pumpkin flavor, and both low carb and Paleo friendly.

Paleo Pumpkin Pancakes
Servings: 1
Serving Size: 1 large or 2 small pancakes
Nutritional Info: 118 calories, 4.8g of fat, 6.4g of carbohydrates, 1.9g of fiber, 13.5g of protein,
Weight Watchers® PointsPlus®: 3 *


  • 1 egg
  • 2 egg whites
  • 1/4 cup pumpkin puree
  • 1/2 tsp. pumpkin pie spice
  • 1 packet Stevia (or 1 tbsp. maple syrup)


  1. Whisk together all the ingredients.
  2. Pour into a skillet over medium high heat sprayed with cooking spray.
  3. Cook until bubbles and edges are cooked through. Carefully flip (it may fall apart slightly, that’s ok) and cooked on the other side.
  4. Serve with more pumpkin, yogurt, maple syrup, or your favorite pancake topping.

    These look yummy ,and I’m all for all things pumpkin. If I wanted to make it thicker (and not paleo), how much oatmeal would you recommend adding? Thanks! Love your website!
