Oatmeal Chocolate Chip Cookies with Walnuts

Oatmeal chocolate chip cookies with walnuts are the perfect recipe to kick off the week. In fact, I can almost guarantee that at this moment I am eating one (or three) with my morning coffee, which I believe is completely acceptable since they are made with oatmeal. Whether you decide to eat these for breakfast, a snack, or anytime in between – they make a delicious, soft & chewy cookie with a bit of crunch from the walnuts. I recommend making up a big batch because these will go fast.

Servings: 36 servings

Ingredients

  • 3/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup butter, softened
  • 1/4 applesauce
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup wheat flour
  • 1 1/2 cups quick-cooking oats (not instant)
  • 1/2 cup chopped walnuts
  • 2/3 cup dark chocolate chunks

Instructions

  1. Preheat your oven to 375°F.
  2. Using a large bowl, cream the sugar, butter, brown sugar, and applesauce using an electric mixer or by hand.
  3. Then add the vanilla extract and egg and mix until well combined. Add the cinnamon, baking soda, salt and flours. Mix well.
  4. Fold in the oatmeal. Then when it seems like the dough can barely hold anything else, fold in the walnuts and dark chocolate. The dough will seem loose, but you will press it together when forming the cookies.
  5. Take the dough and roll about 36 1-inch balls. Place them 3 inches apart on a greased cookie sheet and bake at 375° for 10-12 minutes, until the edges and bottom start to crisp.

    I just made these! And O! M! G! I am NEVER making another chocolate chip cookie again…. they were SO quick and easy to make (no chilling dough, no separate bowls for dry and wet ingredients, no difficult dough to try to stir)… and I just ate one after cooling just a few minutes, and Just. WOW!! AmAzing!!! (I did leave out the walnuts this time, btw)
