Microwave Huevos Rancheros

I love a good quick breakfast and have been known to make quite a few variations on the classic microwave egg mug. But it’s easy to get sick of the same combinations – eggs, veggies, cheese, repeat. So a few days back when I found myself sick of virtually all my go-to combinations and simultaneously seriously craving huevos rancheros, I came up with these. A simple 2 minute dish, made all in the microwave. Top it with some avocado, add some beans or veggies, mix things up.

Servings: 1
Serving Size: whole recipe
Nutritional Info: 220 calories, 4.9g of fat, 20.4g carbohydrates, 4g dietary fiber, 20g of protein, 1.1g of sugar

    1 egg
  • 2 egg whites
  • 2 tbsp. enchilada sauce
  • 2 tbsp. part skim mozzarella cheese
  • Salt and pepper
  • 1 corn tortilla (low carb, use a low carb tortilla)


  1. Whisk together the egg, egg whites, and enchilada sauce.
  2. Place the tortilla in a bowl and pour egg on top.
  3. Season with salt and pepper. Top with cheese.
  4. Microwave on high for 2-2.5 minutes until egg puffs up and is cooked through.
