Maple Mustard Chicken

Has anyone heard of Man Chicken before? For months I have seen a recipe floating around lots of blogs and Pinterest boards called Man Chicken. It’s been on my list of recipes to try for quite awhile and if it had another name I probably would have tried it already.

It’s incredibly easy – mustard, maple syrup, chicken breast, and a fresh herb – and only takes about five minutes of prep time. Sounds simple enough, right? I finally got around to trying it last week and it really is delicious. It’s the perfect meal to make when you don’t feel like cooking and you will want to eat the sauce on everything. The name? I can’t really get behind calling it Man Chicken, so I went with Maple Mustard.

Weight Watchers Maple Mustard Chicken

Servings: 4
Serving Size: 1/4 recipe
Nutritional Info: 208.3 calories, 3.9g of fat, 1g of carbohydrates, 1g of fiber, 27.1g of protein

Ingredients

  • 1 lb. bone-in chicken breast, skin removed
  • 1/2 cup whole grain mustard
  • 1/4 cup maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh thyme, minced

Instructions

  1. Preheat your oven to 450 degrees. Liberally spray a baking dish with cooking spray. I used a square 8 X 8 glass dish.
  2. In a small bowl, whisk together the mustard, maple syrup, vinegar, and thyme.
  3. Place your chicken in the baking dish and season with salt and pepper. Pour the sauce over the chicken and rub into the skin.
  4. Bake for 40 minutes. Let rest for ten minutes before serving and cover with additional sauce.
