Everything about this recipe feels off to me – combine some lemon cake mix and cool whip into a super sticky dough, chill for 30 minutes, and magically get melt in your mouth lemon deliciousness… not possible… but somehow it happens. Honestly, you just have to try this recipe. I learned it from southern friend a few years back who wouldn’t tell me the ingredients until after I tried one (well really three). Just try it.
Weight Watchers Lemon Cool Whip Cookies
Points: 2 weight watchers pointsplus
Servings: 36 cookies
Serving Size: 1 cookie
Ingredients
1 container Free Cool Whip
1 box lemon cake mix
2 eggs
1/2 cup powdered sugar
Instructions
1. In a large mixing bowl, stir together the eggs and cool whip. Add the lemon cake mix and blend well. Chill in the refrigerator for 30 minutes. The dough will be pretty sticky.
2. Preheat the oven to 350 degrees.
3. Place the powdered sugar in a small bowl. Drop into the powdered sugar using a teaspoon and roll to coat dough. Place on a cookie sheet. Bake for 10-11 minutes and let cool.

What size container of cool whip?
I just had to try this recipe, being a fan of nearly anything lemon. I was truly amazed- these are not too sweet tangy lemon flavor, and cake-like in consistency. So easy, went together in very little time- the messiest part of the whole thing is the powdered sugar dusting the dough receives before baking. My biggest problem is my husband, who has eaten almost the whole batch within a few days. In his defense, however, They are addictive!
Made these tonight. They taste okay, a little dry. They also stuck to the cookie sheet really badly. I tried a couple of different types of cookie sheets and they stuck to everything. I might have two good cookies out of the batch. Since I was making them to take to a party of weight watchers gals, I am a little disappointed. Any idea what I could do differently next time?
Silicon parchment paper or a silicon pan liner. Silpat makes a good one.
Has anyone tried this with any other flavor of cakemix? Just wondering if you have what you thought.
