Even though I am continually working on eating healthier, I still love to read food and restaurant blogs of all types, and dream about the food and recipes I read about. Some may call me a masochist. However, I do truly believe in moderation and actually have found that if I plan my day and week right, I can indulge at least once a week (usually twice).
One of my favorite places to conjure dreams of deliciousness…torture myself…make my mouth water… is the blog Joy the Baker and to my delightful surprise she recently shared a recipe that is not only healthy and delicious but also became the first green juice or smoothie I actually enjoyed. There was definitely a time in my not so distant past where I tried desperately to like the ubiquitous green smoothie that everyone in LA seemed to be drinking, and now I have find my own thanks to Joy the Baker. A quick note in her original recipe she called for pears and almond milk, but I only had granny smith apples and vanilla soy milk, so I used that.
Kale Spinach and Apple Smoothie
Servings: 1
Serving Size: about 2 cups * 3 P+
Ingredients
1 cup lite vanilla soy milk
1 heaping cup spinach leaves
1 heaping cup chopped kale leaves
1 frozen banana (quick tip – freeze them without the peels for quicker use)
1/2 granny smith apple
1 tsp honey
Instructions
1. Blend the spinach, kale, and vanilla soy milk on high in the blender until well blended without chunks.
2. Add the frozen banana, apple, and honey and blend to your desired consistency. Drink up!

put bananas in freezer, the next day they were all brown and watery. apparenlty did something wrong. also never understood when it asks for frozen fruit. why can’t you just put ice into the smoothie
