Honey Lime Strawberries

Sometimes you need something a little exciting to spice up your yogurt (or frozen yogurt or pancakes or angel food cake) and these strawberries are perfect for that. The recipe is incredible simple – just boil some honey and lime juice and let the strawberries hang out and do their thing – and they transform into a perfect sweet and tart treat. Pretty soon you will be putting them on just about everything. This recipe is inspired by one from Food and Wine, where they place them on lemon sorbet and add some whipped cream. Yum.

Honey Lime Strawberries
Servings: 6
Serving Size: about 3/4 cup
Nutritional Information: 69.6 calories, .5g of fat, 17.5g of carbohydrates, 2.9g of fiber, .8g of protein * 2 P+

Ingredients

  • 2 pounds strawberries, thinly sliced
  • 1/4 cup honey
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon finely grated lime zest

Instructions

  1. Bring the honey and lime juice to a boil in small sauce pan.
  2. As soon as it begins boiling, turn off the heat and stir in the lime zest.
  3. Pour over the strawberries and let stand for at least 30 minutes. Store in the refridgerator.
