While I was home last week, there were many conversations about food – our favorite meals from our grandmother, the best restaurants we had ever been too, and a random conversation about strange snacks we loved as kids. My brother had a strange affinity for pickles and peanut butter, my sister loved toast with peanut butter and bananas (yum!), and my love for Kraft American cheese toasted into a chip in the microwave. Literally I would take a piece of American cheese and microwave it for about 1 minute until it turned into a cheese chip, slightly pliable and delicious. You should try it. Honestly, run to the microwave, you will be amazed. I may have made one this morning, molded it into a taco shell, and dumped in scrambled eggs with salsa. Today’s recipe is a twist on that microwaved cheese crisp I loved as a kid, updated with some delicious roasted tomatoes. I turned the Kraft Single into a crisp in the oven since baking it adds some delicious crispy brown edges. It is a delicious snack or appetizer and will remind you of grilled cheese and tomatoes. Also in full disclosure, today’s recipe was part of the FoodBuzz Tastemaker’s Program,* but I would never endorse any product on this blog that I didn’t love and to me nothing reminds me of childhood grilled cheeses more than Kraft cheese.

Serving Size: 2 cheese chips

Ingredients
- 8 Kraft 2% Cheddar Cheese Singles
- 16 tomato slices
- Cooking spray
- Salt and fresh pepper
Instructions
- Preheat oven to 400 degrees.
- Line two baking sheets with parchment paper and lay out your tomatoes on one of the sheets. Spray with cooking spray and sprinkle with salt, pepper, and your favorite spices. I like a little Chipotle powder on mine for just a touch of spice.
- Begin roasting the tomatoes. They will roast for a total of 20 minutes total.
- While the tomatoes are roasting, lay the cheese out on the other baking sheet. Place in the oven when there are ten minutes left of cooking time.
- Allow the cheese to crisp up and the tomatoes to finish roasting. Layer together and add any of your favorite fresh herbs.

I love this concept—but I tried microwaving the cheese, and all I got was a melted, gooey mess. The cheese didn’t crisp up, but spread out…
Is the secret using Kraft specifically? I used Weight Watchers singles…
Hmm…honestly I have only ever done it in the microwave with the Kraft cheese and had no problems. I have tried it with other cheese in the oven on a silicone mat or parchment paper and it has worked great. I have never tried it with Weight Watchers singles but it may be something in the cheese that makes it not work.
Yum! Made this tonight and was thrilled with the gooey goodness of the cheese. Great way to enjoy a classic meal and for only 2 points!
I made this tonight with Kraft Fat free thins and it came out perfect in the oven! A great 1 point snack for 2 slices with tomatoes….yum, thanks so much!
