I find myself flip flopping between salad and ice cream a lot in the summer. Sometimes I want ice cream for lunch, and this generally leads to salad for dinner or vice versa. The beach is too close and there are too many bikinis nearby for me to forget to balance all the yummy summer ice cream with some greens. And in my opinion, sometimes there is nothing better than a yummy, crispy salad on a hot day. This simple salad combines greens, grapes, and pecans with a low calorie balsamic made with tomato juice. You could easily add goat cheese and some chicken to this salad and it would be divine.
Servings: 4
Serving Size: 1/4 salad
Nutritional Information: 103.4 calories, 5.6g of fat, 11.9g of carbohydrates, 3.4g of fiber, 3.2g of protein * 2 P+
Ingredients
- 8 cups mixed greens
- 1 cup red grapes, sliced in half
- 1/4 cup chopped pecans
- 1/2 cucumber, chopped
- 1/4 red onion, chopped small
For the dressing
- 1/4 cup and an additional 2 tablespoons of tomato juice or V8
- 2 tablespoons balsamic vinegar
- 1/2 envelope Italian salad dressing mix
- 1 teaspoon honey
Instructions
- Whisk together the dressing in a small bowl and set aside.
- Toss together the salad in a large bowl. Drizzle the dressing over and serve. Makes 2 meal portions or 4 side portions.

Hi, I have a question regarding the dressing. Is it 1/4 cup of tomatoe juice and 2 tablespoons of V8? Making sure I get this right, thank you.
I think she means 1/4 cup + 2 Tbsp of tomato juice OR V8.
Could I use regular italian seasoning instead of the dressing mix? There is usually so much sodium in the prepared studd.
