I read about these amazing little desserts on Decorating the Elevator and just couldn’t wait to make them – peanut butter, bananas, and chocolate – what could be better. I also couldn’t believe I had never thought to make something like this. Chocolate covered frozen bananas are one of my favorite things and these are just as delicious (maybe more so with the peanut butter) and very easy. To lighten up the recipe a bit, I only dipped half the banana in chocolate and used reduced fat peanut butter.
Frozen Chocolate Banana Bites
Servings: 26
Serving Size: 2 banana bite
Nutritional Info: 50.6 calories, 2.3 g of fat, 7.2 g of carbohydrates, .8 g of fiber 1 g of protein * 1 P+
Ingredients
4 bananas
1/4 cup chocolate chips
1/4 cup reduced fat peanut butter
Instructions
1. Cut your bananas into smaller pieces (about 3/4 inch). I ended up getting about 9 pieces per banana.
2. Place chocolate chips and peanut butter into a small bowl and microwave for about 1 minute until melted. Stir together.
3. Place a piece of parchment paper on a baking sheet. Dip the banana pieces into the chocolate sauce until covered halfway. Place on parchment paper. Freeze for at least one hour. For a harder texture, let freeze longer. Store in an airtight container in the freezer.
Note: If you include the bananas in your points calculation, you will get a higher point value.

These look awesome, but are a royal pain to make! First of all the chocolate & peanut butter seized up when I melted it in the microwave. That was probably my own fault, but when I did it again–this time just chocolate, no peanut butter–I had a problem with the chocolate sliding off the bananas and laying in a puddle on the parchment paper. Right now I’ve got the plain bananas in the freezer and I’m going to try dipping the slightly frozen bananas in the newly melted chocolate and see how that works.
Made these tonight, came out perfect and absolutely delicious…great sweet treat!!!
