Friday Five:  Healthy Superbowl Snacks

The Superbowl is quickly approaching and if you are like me, you are already planning your menu and are rooting for the Patriots. I grew up outside of Boston so am incredibly excited my home town team has made it. This week I wanted to provide a number of my favorite recipes for parties, entertaining, and in my opinion perfect for the Superbowl. There are more than five – I just couldn’t hold myself back. I also plan on cooking way too much and may have to start invite strangers if I can’t limit the snacks I want to make. What are you serving for the Superbowl?

1. Barbecue Meatloaf Muffins: 3 P+ or 104 calories
2. Quiche Cupcakes:1 P+, 40 calories
3. Skinny Queso: 1 P+, 75 calories
4. Skinny Eggrolls: 2 P+, 90 calories
5. Macaroni and Cheese Cupcakes: 3 P+, 130 calories
6. Skinny Spanakopita: 2 P+ for 3, 80 calories
7. Chili Shrimp: 5 weight watchers pointsplus, 197 calories
8. Oven Roasted Salt and Vinegar Potato Chips: 3 P+ for 1 cup
9. Mustard Pretzel Chicken Fingers: 3 P+
10. Lasagna Cupcakes: 3 P+
11. Turkish Kofte Meatballs: 5 P+, 220 calories
12. Ham and Cheese Mini Pockets: 3 P+s for 3 pockets, 90 calories
13. Portabello Mini Pizzas: 1 P+
14. Teriyaki Wings: 5 P+, 200 calories

    Well, you just made a change to our plans for Super Bowl eats. Love the idea of the Ham and Cheese Mini Pockets. We are already planning on Mini-Tacos made with won-ton wrappers and will have plenty of the wrappers left over so that makes excellent use of those. Will probably use Monterey Jack and sliced deli ham which I already have. Now my husband is thinking about your Terriyaki Chicken Wings – the list is growing.
    We will also have our traditional Sausage Balls and BBQ Meatballs. Its just one of those days when we don’t count points. Excellent suggestions and we always love your recipes.
