I am starting to get excited for Saturdays. For fall days where it is perfectly acceptable to eat a cheeseburger for breakfast and hang out around a truck bed with a coozie in hand. Is that how you spell coozie? I’m not quite sure. The delicious food, friends, crisp weather, and some college football. It is one of my favorite times of year and let’s be honest, I would tailgate for just about anything. I love it. And just in case you were curious, here is what I will be wearing, and maybe these if I can ever justify the splurge.
What are you favorite tailgating recipes?
1. Grilled Sriracha Chicken, 5 weight watchers points plus
I love this chicken. It’s spicy, it’s a touch sweet, it’s crispy and juicy at the same time, and it is perfect to bring to a tailgate. Why? Well at most tailgates I have been to, chicken breast is normally the last thing someone thinks about. It is purchased last minute in case someone doesn’t want a burger or ribs or a brat or some other yummy creation, and thrown on the grill without much thought or flavor. This will change things. Everyone will want the chicken.
2. Skinny Queso, weight watchers points plus
Tailgates always have chips, usually lots of them and usually lots of dips. Personally I don’t have enough restraint to stay away form the dips, so I make sure to bring one that I can eat without worry. A baked of baked chips or even some homemade ones and a big bowl of skinny queso and I am happy.
3. Black Bean, Corn, and Avocado Salad, 4 weight watchers points plus
This black bean, corn, and avocado salad is delicious with the Sriracha chicken above and makes a great, easy side dish for a tailgate. It’s good to have some veggies around. It is also delicious on top of the cowboy turkey burger below. Skip the bread, add some of this salad, and you are good to go.
4. Cowboy Turkey Burgers, 6 weight watchers points plus
I always run out of space when I am packing for a tailgate, as in my cooler is overflowing and I have packed way too many things. These burgers can help you free up some space since everything is already mixed into the patty. The cheese, jalapenos, and mustard is already inside so you just need to throw them on the grill and let them do their thing.
5. Teriyaki Chicken Wings, 5 weight watchers points plus
No tailgate is complete without some chicken wings and these ones will make everyone happy. Cook them at home before the tailgate and then just toss them on grill to heat them up before serving. Or eat them cold, I may or may not stand over the sink eating cold wings in the morning every time I make these.
