Friday Five:  Skinny Desserts

Today I really wanted to post some kind of Thanksgiving recipe round up, but the reality is I still have never cooked a real

Thanksgiving meal before. I have made bits of pieces of meals and yesterday even dropped a turkey into the crock pot which I will be sharing tomorrow, but just don’t consider myself expert enough to share tried and true Thanksgiving recipes. Living far away from home I still have yet to stand by my Mom next to the stove all day and learn her secrets and sinc eThanksgiving is all about traditions, a true Thanksgiving round up will have to wait. So until then, I am perfectly content being in charge of bringing desserts and sharing some favorites with you. I haven’t decided exactly what I bring this year, but I can guarantee that the oatmeal cranberry white chocolate cookies will be there. They were already requested last week.

1. Slow Cooker Apple Crisp: 7 P+

The great thing about this dessert recipe for a holiday is that it can literally cook all day and then just hang out warm until people are ready for dessert. And since it stays warm it works for everyone from those who eat dessert immediately following the meal, or those like me who stuff themselves silly and then a couple of hours before dessert can begin.

2. Pumpkin Rice Crispy Treats: 4 P+

I fell in love with these pumpkin rice crispy treats the first time I made them. And although rice crispy treats are the fanciest of desserts, these are extra special because they are made with pumpkin. However since these do not keep well I would plan on making them the day of, or even making them after dinner. It would be a fun activity with kids.

3. Oatmeal White Chocolate Cranberry Cookies: 2 P+

I just can’t say enough about these cookies. The first time I ever had them was at my Aunt’s house and I have been making them ever since. They make a perfect hostess gift and are my favorite cookie to make. People simply love them.

4. Pumpkin Brownie Bites: 3 P+

Pumpkin and chocolate can get pretty magical and these brownie bites don’t fail to deliver. What’s better? They come in a small serving size so it makes it easy to control your portions and sample bits of everything. Want to make them more indulgent? Consider adding some pumpkin cream cheese frosting. Yum.

5. Rice pudding: 5 P+

So although rice pudding isn’t traditionally a Thanksgiving dessert, I personally think it should be. Its warm and comforting and delicious and makes a perfect end to any meal. It also can be infused with all the spices of fall and I bet if you got creative, pumpkin could easily be added.
