Oh how I love three day weekends. I am heading to Denver to see my one of my favorite friends in the world and ring in her birthday. I couldn’t be more excited. Early fall weekends in beautiful places always make me happy, and especially when I get to spend it with one of my favorites. In the spirit of the holiday weekend, here are some great recipes to share this holiday weekend. Hopefully you are spending it with family, friends, and people who make you smile. I am definitely planning on using this and this.
1. Pimento Cheese, 3 weight watchers points plus
So if you wander over to this post, which I hope you will, I was definitely one of the seven girls who had never heard of Pimento Cheese. But I am ever so happy I was introduced to it. This recipe is delicious and perfect for a late summer barbecue. And Jennifer who self admittedly comes from a family where gravy may well be considered a beverage is serving up lots of yummy Southern dishes with a healthy spin.
2. Bacon Inside Out Cheeseburger Sliders, 5 weight watchers points plus
Every good Labor Day Barbecue needs a good burger and this one does not disappoint. Stuffing bacon inside a burger is never bad and then adding cheese and delicious fixings and you are ready for the long weekend. This recipe comes from one of my favorite blogs – Danica’s Daily – a great place for inspiration for anyone on Weight Watchers.
3. Spicy Grilled Shrimp Tacos, 5 weight watchers points plus
With the summer heat, sometimes you just want something light, fresh, and flavorful and these shrimp tacos deliver. They are full of delicious heat and spice and make a quick, yummy meal on the grill. Eat them on their own or stuffed in tortillas – they are sure to please either way.
4. Crazy Feta Dip, 3 weight watchers points plus
So my obsession with this dip has not ended. I have actually made it approximately every 4 days since the original post and eat it on just about anything. A boring turkey burger is transformed with this stuff, smeared on some grilled chicken it’s perfect, and spread on veggies it’s magic. Honestly go make this stuff, it’s that good.
5. Frijoles Charros aka Cowboy Beans, 3 weight watchers points plus
To be honest I had kind of forgotten about this recipe until last week when someone left a comment (I love comments) about how much they enjoyed it. Immediately I ran to the store and bought what I needed to make some of my own. Bacon, jalapenos, tomatoes, and onions make these beans sing.
