Cucumber Dill Salad

I really want to start a garden – a city garden I guess or one of those cool wall hanging gardens. Thinking about all the great things I would grow in said garden, I began to think about English cucumbers and was inspired to create this salad. It is simple and refreshing and combines too of my favorite things – cucumber and dill. It’s perfect as a side dish and works well with almost anything.

Weight Watchers Cucumber Dill Salad
Points: 1 weight watchers pointsplus
Servings: 8 servings
Serving Size: 1/2 cup
Nutritional Info: 20.2 calories, .1 g of fat, 5.4 g of carbohydrates, .3 g of fiber, .2 g of protein
 

Ingredients
2 English cucumber, sliced very thin
1/2 red onion, sliced thin
1 tbsp salt
1/2 cup white vinegar
3 tbsp sugar
1/4 cup fresh dill, chopped
Salt and pepper to taste

Directions
1. Slice the English cucumbers very thin and place in a colander or mesh strainer. Toss with 1 tbsp of salt and let sit for 20 minutes. This will help remove some of the water. Dry well.
2. In a bowl, whisk together the dill, white vinegar, salt, pepper, and sugar. Add the red onion and cucumbers and mix well. Let sit for at least 15 minutes before serving.
