Is it weird that I am dreaming about corn and bacon? I am a little worried myself. Ever since the corn and bacon pie, I am constantly thinking about new ways to bring these two ingredients together. If you have idea, please share! This recipe is a spin on a traditional BLT combining bacon, lettuce, tomato and then adding fresh corn, cilantro, a jalapeno, and a touch of lime juice. Served up in adorable lettuce cups for a simple lunch or dinner. Consider adding chicken, shrimp, or avocado if you want some additional protein.

Serving Size: 3 lettuce cups
Nutritional Information: 96.2 calories, 4.8g of fat, 11.3g of carbohydrates, 1.8g of fiber, 3.8g of protein
Ingredients
- 4 slices bacon
- 2 ears of corn, cut off the cob
- 1/4 cup cilantro
- 1 cup cherry tomatoes, halved
- 1/4 cup sliced green onions
- 1 jalapeno, minced
- 1 tbsp reduced fat mayo
- juice of 1 lime
- Salt and pepper to taste
- Romaine lettuce leaves
Instructions
- In a medium skillet, cook the bacon until crispy. Discard all of the bacon grease except for 1 tbsp. Set bacon aside.
- Add the corn and cook for about 3 minutes until just tender. You could also grill the corn or leave it raw.
- Toss together the remaining ingredients, including stirring in the mayo and lime juice.
- Season with salt and pepper. Serve in lettuce cups.

Your request for additional corn/bacon recipes reminded me of a recipe that I came across on the Food Network site, for White Cheese Pizza with Grilled Corn and Wood Smoked Bacon. I made it a few years ago and found it pretty good (can’t go wrong with the ingredient list, really).
