In the spirit of the holidays, I wanted to post at least a few dessert recipes although I must preface this one by saying that even though they are indeed delicious, these isn’t one of my most nutritious posts, however it will allow you to indulge without sacrificing your diet as long as you can stick to eating one or two. These were inspired by a love of salty and sweet desserts and from a recipe I saw in Eating Well. I adjusted the ingredients by adding more pretzels and reduced fat peanut butter to lessen the calorie count and so that they could be larger.
Weight Watchers Chocolate Peanut Butter Pretzel Balls
Points: 1 Weight Watchers PointsPlus
Servings: 20
Serving Size: 1 chocolate peanut butter pretzel ball
Ingredients
1/2 cup pretzels
1/4 cup reduced fat peanut butter or other nut butter
1/2 cup chocolate chips
Instructions
1. Crush the pretzels in a ziploc bag until they are in small pieces. The smaller the pieces the more round you can make the chocolates and the better the ingredients will stick together. As you can see in the picture, my pretzel pieces were not quite small enough – lesson learned.
2. In a small bowl, mix together the pretzel pieces and peanut butter (or other nut butter) until well combined and place in the freezer for about 15-20 minutes which will make it easier to roll the balls together.
3. Pull the mixture out of the fridge and roll the pretzel peanut butter into small balls a little larger than a teaspoon. It should make 20 pretzel peanut butter balls. Place on parchment or wax paper on a cookie tray.
4. Return the peanut butter pretzel balls to the freezer and let chill for 1 hour.
5. After a hour, remove the pretzel peanut butter balls from the freezer. Heat up the chocolate chips in a small bowl in the microwave. Heat the chocolate chips on medium power and stir every minute. They will take between 2-4 minutes to become melted and smooth.
6. Dip the peanut butter pretzel balls into the chocolate and roll to cover completely. You can also just dip half the ball in, as you can see in the pictures, which will count down the calories.
7. Place in the refrigerator for about 30 minutes until the chocolate hardens. Store in an airtight container.

Just made these for a group of friends, they were a huge hit! Like you suggested, I crushed the pretzel pieces into teeny tiny pieces. I thought they were too small at first, but they turned out perfectly. Delicious!
I couldn’t make these work exactly as written – first of all I had trouble figuring out how many mini pretzel twists I’d have to use to make 1/2 cup of pretzel crumbs. I finally measured out 30 pretzel crisps and crushed them in my food processor and it made 1/2 cup.
Then I had trouble getting the things to stick together, so I added another Tbsp of peanut butter and a Tbsp of honey. And I couldn’t get them small enough to make 20 out of a batch – the best I could get was 13 or 14. I used my cookie
However, I cut back on the amount of chocolate chips, and found I could make do with 1/4 cup instead of 1/2 cup.
With the adjustments to the recipe, that made the balls worth 2 points each instead of 1 – still a pretty good deal when you want a sweet/salty treat.
Oops, I meant to say I used my cookie/melon baller to measure out the mix into uniform size balls.

Thanks for sharing these! I just made a batch and was able to only make 15 and used 1/4 c choc chips…still it came out as 1 point a piece when I put into the recipe builder and they sure satisfy that “sweet/salty” craving!!

I just made these and love them!! However, I know my proportions were way off since I didn’t get nearly 20 cookies. Do you use a 1/2 cup of crushed pretzels, or do you measure out a half cup of pretzels and then crush them? I did the later and didn’t get many cookies, but the cookies I did get were delicious!
These look very yummy. I was wondering if you have tried to use the PB2 in this yet? How about Better N Peanut Butter?
I haven’t but I am sure it would work great. I would probably double the amount if I was using PB2 since I am already saving on the calories for even more peanut buttery goodness.
These sound delicious but I am wondering, do you crush the pretzels then measure a 1/2 cup or measure a 1/2 cup then crush. Makes a big difference in the number of pretzels used.

Just mix up the PB2 according to the package directions to make the amount of peanut butter called for in the recipe. Then use it just like normal peanut butter. Hope you like them!
These don’t work very well with PB2. The pretzels absorb the water and become mushy. They still taste good though.
Recipe is not quite right. And not enough peanut butter fir the amount of pretzels.
