Chocolate Cupcakes with Almond Cream Cheese Frosting For Two

I have completely mixed feelings about Valentine’s Day, and I am well aware I am not the only one. Part of me thinks it’s a bit of an invented holiday and that we should all celebrate our love for significant others, friends, and family everyday. But the other part of me can’t wait to decorate, eat and analyze way too many conversation hearts, indulge on chocolate and hearts and sprinkles, and finally make the time to make all those adorable homemade cards I think about but never find the time to create. Eeek….what do you think?

However no matter where you fall on the love/hate Valentine’s Day spectrum, you should find a friend or loved one and make these cupcakes for two. Indulgent chocolate, almond cream cheese frosting, and built in portion control. Valentine’s Day or not, they make a special and yummy dessert.

Chocolate Cupcakes with Almond Cream Cheese Frosting For Two
Servings: 2 servings
Serving Size: 1 cupcake

Ingredients

  • 3 tbsp. all-purpose flour
  • 2 tbsp. sugar
  • 1 tbsp. cocoa powder
  • 1/8 tsp plus 1/16 tsp. baking soda
  • 1/16 tsp. salt
  • 3 tbsp. low-fat buttermilk or nonfat milk
  • 1 tbsp. vegetable oil
  • 1 tbsp. dark chocolate chips
  • 1/2 tsp. vanilla extract
  • 1 tbsp. light cream cheese, room temperature
  • 1 tbsp. powdered sugar
  • Dash almond extract

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a small bowl mix together the flour, sugar, cocoa powder, baking soda, and salt. Add the milk, vanilla extract, and oil. Stir until just combined.
  3. Fold in the chocolate chips. If you like, save a couple of chocolate chips for the top of the cupcakes. Pour into two lined muffin wells sprayed with cooking spray.
  4. Put in the oven and bake for 20 minutes.
  5. Meanwhile beat together the cream cheese, powdered sugar, and almond extract until it reaches frosting consistency.
  6. Let cupcakes cool and spread frosting on top.
