A few weeks ago I let you in on a little secret, that I shamelessly eat cherries everyday and probably go through pounds every week. I don’t know what to say other than I simply love them and cherish the short season when they are in abundance. This recipe combines two star crossed lovers – chocolates and cherries – in a light, sweet cupcake for only 3 points and 100 calories. Not a cherry fan – consider replacing the cherries with raspberries, strawberries, or just leaving them out. The base recipe for the chocolate cupcakes comes from Chocolate Covered Katie, a wonderful blog full of healhty, mostly vegan desserts.

Nutritional Information: 104.5 calories, 1.5g of fat, 22.6g of carbohydrates, 1.5g of fiber, 1.7g of protein
Ingredients
- 1/4 cup cocoa powder
- 1 cup flour
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup plus 2 tbsp sugar
- 1 and 1/2 tbsp cornstarch
- 1 and 1/2 tsp pure vanilla extract
- 1/2 cup vanilla yogurt
- 1/4 plus 2 tbsp cup applesauce
- 1.5 tbsp vegetable oil
- 1/2 cup skim milk
- 1/4 cup chocolate chips
- 2 cups cherries, pitted and chopped
- 2 tbsp powdered sugar
Instructions
- Preheat the oven to 350 degrees.
- Mix together all of your dry ingredients in one bowl and all of the wet ingredients in another.
- Add the wet ingredients to the dry and stir until just mixed.
- Fold in the cherries and chocolate chips. Pour into your cupcake tray.
- Bake for 20-25 minutes until cooked through. Sprinkle with powdered sugar.
