So truth be told, yesterday I was staring into my fridge and didn’t see much – some chicken breast, peppers, and well that’s about it. It is definitely time to go shopping but I just didn’t want to last night so I had to come up with something. I had read a few weeks back about making homemade spice blends, so I decided this was the night to try and it made some homemade chicken fajitas. Simple and quick and you can make enough of the spice blend to save for later. It would work great with steak or shrimp as well.

Ingredients for Chicken Fajitas
1 pounds boneless, skinless chicken breast tenderloins, cut into strips
2 poblano peppers, seeded and sliced
1/2 red onion, sliced
1 red pepper, sliced
2 tbsp fresh chopped cilantro
1/3 of recipe for fajita seasoning
For Fajita Seasoning
3 Tbsp. cornstarch*
2 Tbsp. chili powder
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. sugar
2-1/2 tsp. crushed chicken bouillon cube
1-1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp cayenne pepper
1/4 tsp. crushed red pepper flakes
1/2 tsp. cumin
*The cornstarch is like a preservative that will keep it fresh longer, if you are going to use it all right away, you do not need to add it.
Instructions
1. Rub the chicken with the fajita seasoning.
2. In a medium saute pan, get the onions, poblanos, and peppers cooking for about 5 minutes. Add the chicken and cook for an additional 5 minutes or until chicken is cooked through.
3. Mix in the cilantro right before serving and an extra dose of fajita seasoning on top if needed.
